Ingredients
- 2 cans (5 oz each) tuna, drained
- 1 can (15 oz) cannellini or white beans, drained
- 1/4 red onion, thinly sliced
- 2 cups arugula or spinach
- 3 tbsp olive oil
- 1 lemon (juiced)
- 1 tsp dijon mustard
- 2 tbsp chopped parsley
- Salt and black pepper
Instructions
- Whisk the olive oil, lemon juice, dijon, salt, and pepper in a large bowl.
- Add the drained beans and sliced red onion and toss to coat; let sit 5 minutes to soften the onion.
- Flake in the tuna and add the greens and parsley.
- Toss gently, taste for salt and acid, and serve with crusty bread.
