Ingredients
- 8 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1/2 tsp onion powder
- Salt and black pepper
Instructions
- Heat the oven to 425°F (220°C). Pat the chicken thighs completely dry — dry skin is crispy skin.
- Rub with olive oil, then season all over with garlic powder, paprika, oregano, onion powder, salt, and pepper.
- Arrange skin-side up on a foil-lined sheet pan with space between each piece.
- Bake 35-40 minutes until the skin is deep golden and the internal temperature reads 175°F (80°C).
- Rest 5 minutes before serving with rice, potatoes, or a simple salad.
