  1. Heat the oven to 425°F (220°C). Pat the chicken thighs completely dry — dry skin is crispy skin.
  2. Rub with olive oil, then season all over with garlic powder, paprika, oregano, onion powder, salt, and pepper.
  3. Arrange skin-side up on a foil-lined sheet pan with space between each piece.
  4. Bake 35-40 minutes until the skin is deep golden and the internal temperature reads 175°F (80°C).
  5. Rest 5 minutes before serving with rice, potatoes, or a simple salad.
