Smoky Black Bean Soup

Ingredients
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 3 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 lime (juiced)
- Salt and pepper to taste
- Toppings: cilantro, avocado, tortilla chips
Instructions
- Heat olive oil in a pot over medium heat. Add onion and cook 4-5 minutes until soft, then add garlic, cumin, and smoked paprika and cook 1 minute until fragrant.
- Add the black beans, diced tomatoes, and vegetable broth. Bring to a simmer and cook 15 minutes.
- For a thicker soup, blend about half the pot with an immersion blender (or mash with a spoon), then stir back together.
- Stir in the lime juice and season with salt and pepper to taste.
- Ladle into bowls and finish with cilantro, avocado, and tortilla chips.
