- 2 ripe bananas
- 2 large eggs
- 1 cup rolled oats
- 1/2 tsp baking powder (optional, for fluffier pancakes)
- Pinch of cinnamon and salt
- Butter or oil for the pan
Instructions
- Blend the bananas, eggs, oats, baking powder, cinnamon, and salt until smooth. Let the batter rest 5 minutes to thicken.
- Heat a little butter in a nonstick pan over medium-low heat.
- Pour small pancakes and cook 2-3 minutes until bubbles form and the edges set, then flip and cook 1-2 minutes more.
- Repeat with the rest of the batter and serve with fruit, yogurt, or maple syrup.
