High-Protein Egg Fried Rice
The best use for last night's rice: a fast, high-protein fried rice loaded with eggs. 28 grams of protein a serving and ready in 15 minutes.

Ingredients
- 4 cups cold cooked rice (day-old is best)
- 5 large eggs, beaten
- 1 cup frozen peas and carrots
- 3 scallions, sliced
- 3 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 2 tbsp neutral oil
- 1/2 cup edamame (optional, for extra protein)
Instructions
- Heat 1 tbsp neutral oil in a large skillet over medium-high. Pour in the beaten eggs and scramble until just set, then remove.
- Add the remaining oil, the garlic, and frozen peas and carrots; stir-fry 2 minutes.
- Add the cold rice, breaking up any clumps, and fry 3-4 minutes to crisp it up.
- Return the eggs, add edamame if using, and pour in soy sauce and sesame oil. Toss 1-2 minutes.
- Fold in the scallions and serve hot.
