Rice and Beans Skillet
The classic cheap dinner that actually tastes good: rice, beans, onion, spices. One skillet, full plates, almost nothing wasted.

Ingredients
- 1 cup uncooked rice (or 3 cups cooked leftover rice)
- 1 can black or pinto beans, drained
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp oil
- 1 tsp smoked paprika or chili powder
- 1/2 tsp cumin
- 1 cup salsa or diced tomatoes
- Salt, pepper, lime if you have it
Instructions
- If starting with dry rice, cook it per package directions. Leftover rice is even better.
- Sauté onion in oil 4 minutes; add garlic and spices 30 seconds.
- Stir in beans and salsa; simmer 5 minutes. Fold in rice and heat through.
- Taste for salt, finish with lime, and serve with whatever cheese or hot sauce you have.
